Truffles are a well-known gastronomic delicacy. There exists a delicious truffle native to the province of Québec, the appalachian truffle. However, virtually all the truffles commercially available in Canada are imported from outside the country. It is with the development of a local market in mind that, in 2009, ArborInnov started producing truffle plants and implementing experimental truffières in southern Québec.

Research, Development, and Innovation

Thanks to cutting-edge controlled mycorrhization methods developed by ArborInnov, we can now promote a high quality symbiosis between our fungi and the roots of carefully selected broadleaf trees and conifers. This allows us to currently produce truffle plants inoculated with the burgundy truffle (Tuber uncinatum), as well as with the appalachian truffle (Tuber canaliculatum). We can also, upon request, inoculate saplings with the black Périgord truffle (Tuber melanosporum), as well as with the white summer truffle (Tuber borchii).

Jérôme Quirion,
Founder of ARBORINNOV and microbiologist


Jérôme Quirion has a bachelor in biology and is specialized in soil microbiology. He founded ArborInnov in 2009. Since then, he is mostly involved in truffle culture R&D. He has visited truffières in Europe and South America, has met many truffle culture leading experts, and has established collaborations with researchers at INRA (French National Institute for Agricultural Research) and at different research centers in Québec. His goal is to develop cutting-edge techniques in fungi-plants symbiosis, and more specifically in truffle cultivation.
